Grass Fed Beef Fajitas
Fast and easy to cook, and very tasty!
Perfect mid week meal, when time is of the essence!
The other night we made some awesome Grass Fed Beef Fajitas!
In the morning, we took a package of Grass Fed Beef London Broil out of the freezer, to defrost.
At dinner time; we sliced up a red and green pepper, an onion, a medium fresh tomato, and a few scallions.
We took out the defrosted grass fed beef and set them on our meat cutting board, and cut the beef against the grain in thin slices.
We sautéed the peppers and onions, in olive oil, and left to rest in the pan.
Then, on the stovetop- we heated an olive oiled, salt and peppered iron skillet, and put the beef on the pan. We sautéed the beef for about 1 to 2 minutes, then with a pair of tongs flipped the beef over and cooked the other side for another 1 to 2 minutes.
We grated pepper jack cheese into a bowl.
And warmed up 8 soft corn tortillas.
Next we put the peppers, onions, tomatoes, and beef into separate bowls, and served them up!
Don't forget to serve with your favorite hot sauce.
Everyone can make their own fajitas- some people like more peppers, or just a little onions, a bit of cheese, heavy on the beef- everyone wins!
