Fast and Easy Wednesday Night FarmEats Grass Fed Beef Fajitas!
It was a warm summer Wednesday evening, and we wanted something fast and easy to eat!
Grass Fed Beef Fajitas!
You can use skirt steak, flank steak, or hanger steak. We had a nice FarmEats grass fed top round London Broil that was defrosting in the fridge, that was perfect for fajitas! You can marinade the beef before using, which is always good with the tougher leaner cuts.
We defrosted overnight a 1 1/2 pound, FarmEats top round London Broil. Next we cut the London Broil against the grain, into thin strips. Also, we cut up peppers, onions, tomatoes, and shredded some Jack cheese, and made guacamole.
We sauteed the onions and peppers in a pan, with olive oil on the stove top.
Put the onions, peppers, cheese, tomatoes, and guacamole, in bowls.
Then we sauteed on the stove top, in olive oil, on a cast iron pan, the London Broil strips for 1.5 minutes max, flipping the strips once.
We then, heat up some soft corn tortillas, on a frying pan for a couple of minutes.
Ready to serve!
