Fall Harvest Time!
As the days get shorter, and the weather gets cooler, it becomes Fall Harvest Time!
It is so much fun to see the changes in the crops grown at our farmers markets during the seasons. While we still see some tomatoes and corn, and green leafy vegetables, we are starting to get the winter squash!
Last weekend, over at the farmers markets we picked up some dinosaur kale, pumpkin, delicata, acorn, and butternut squash, garlic, and FarmEats grass fed beef short ribs flanken style.
We first roasted the pumpkin in the oven, and when it became soft, scooped out the flesh, simmered with onions, garlic, and maple syrup for a while, and then pureed it into a sumptuous pumpkin soup!
We also, sliced the delicata, acorn, and butternut squash, and roasted them in the oven.
With the FarmEats thin cut short ribs, I placed them in a cast iron pan out in the BBQ on a low flame and cooked them for about an hour, turned them over and wanted to cook them for another couple of hours. Unfortunately the gas ran out! So I brought them into the house and put them on the stove top, covered them and sautéed them on a medium flame which rendered the fat down and crisped up the short ribs turning them into rich meaty and crunchy beef bacon!
